This is one of my favorite Ice-cream, apart from Vanilla, Chocolate, Mango and all the other flavors out there. There is something attractive and delicious about strawberries that I cannot put my finger on. The creamy texture made this one of the best Ice-creams I have made so far. I whipped it to perfection!

It is always fun to prepare a delicious dish and share with you all, but you never get to hear about the behind the scene process. Here is one incident: It started off with the splash of hot strawberries pushing through the blender (I should have been attentive). I just totally got distracted by talking to my husband. Seeing this my husband who is a jack of all trades, nodded his head and said "Baby, that is not how you do it!"
He took over the blender and just as he turned it on (before I could tell him about the "HOT" strawberries part), it was like a volcano erupted in my Kitchen, strawberry juice flying all over the counter, cabinets, floor, on me and of course on my husband. As it landed on him, he yelled out "it's hot!!! it's hot!!!" as he rushed to wash his hard in cold water. That is when I got an opportunity to speak up about the strawberries being hot.

INGREDIENTS

  • Strawberries                    - 2-5 cups
  • Heavy Cream                     - 2 cup
  • Sweetened Condensed Milk        - 14 oz/ 1 tin
  • Vanilla Extract                 - 1 1/2 tsp
  • Lime Juice                      - 1 tbsp.
  • Sugar                           - 2 tsp

METHOD OF PREPARATION STEP BY STEP


1.Wash and hull the strawberries. Pat dry with a kitchen towel and chop into medium sized pieces.

2.Heat chopped strawberries, sugar and lemon in a saucepan. Bring it to a boil and then simmer it for about 5-7 minutes. Stir occasionally. Remove from heat. Set aside to cool.

3.Grind the cooled strawberry mixture in a food processor/ mixer to a smooth puree.

If needed, strain it to remove the seeds. Then refrigerate it for 30 minutes.

4.In a large bowl combine heavy whipping cream, condensed milk and vanilla extract. Whip it with a electric mixer until medium stiff peaks form.

5.Fold in refrigerated strawberry sauce until well combined.

6.Pour into a freezer safe container and freeze until set for few hours or overnight.

NOTES:
  • If you want to make your Ice-Cream much more smoother after pouring the Ice-Cream mixture into the container, freeze it for 45 minutes. Then take it out, blend it in a mixer/ blender or break into pieces and then whip it with a mixer. Pour back the mixture into the container and freeze it for about 4-5 hours/ overnight until firm.
SERVE TWO TO THREE SCOOPS
