MUSHROOM VEGETABLE PULAO

Mushroom Vegetable Pulao is a fast and simple rice dish to prepare. If you are busy or do not have a lot of time to prepare lunch or dinner, pulao is your friendly dish. All you need is a vegetable, rice and some usual spices you find in your kitchen. This vegetarian dish is one of my frequent dishes prepared at my house, either for lunch or dinner. So far everyone in my family loves eating Pulao. I try to keep it different each time by preparing varities of pulao, using any vegetable in my refrigerator like spinach, fenugreek leaves (methi), white chick peas (chana), peas, Paneer etc.

I have always wondered how to get perfect rice (without broken grains) after cooking (other than parboiling). Whenever I cook rice in a normal pan, it tends to break easily while stiring. Even if you wanted to stop stiring, you cannot, thinking the rice might stick to the bottom of the pan. I am sure there are many who have thought like I did, and the answer is "PRESSURE COOKER". That is how I switched to using pressure cookers, but there is a much more possibility to get the rice spoiled in the cooker than in the pan if you do not know the method. It also depends on the size of the pressure cooker, I usually use a 4 liter cooker and 1-2 1/2 cups of rice and pressure cook for only 5-6 minutes, then set aside until the pressure leaves on its own and it always comes out prefect. Another key point to remember while cooking rice in the pressure cooker is to use only 1 1/2 - 1 3/4 cups of water for 1 cup of rice, this makes sure the rice is not crumbled and sticky. (this is my recommendation from my experience)

Mushroom have a lot of Health Benefits and many of them are best for you bladder because of selenium (selenium is know to fight off cancer causing compounds in our body). A lot of studies say mushroom is good to decrease obesity, heart disease and diabetes.

INGREDIENTS

  • Basmati rice/ Long grain rice - 1 cup
  • Mushroom (sliced)             - 1 medium
  • Onion (finely chopped)        - 1 medium
  • Ginger (minced)               - 1 inch
  • Garlic (minced)               - 3-4 cloves
  • Whole Spices:
      • Pepper Corn             - 1 tsp
      • Cinnamon Stick          - 1 inch
      • Cardamom                - 2-3
      • Cloves                  - 4-5
      • Bay Leaf                - 1
  • Carrot (cubed)                - 1/3 cup
  • Peas                          - 1/3 cup
  • Green Chilies (crushed)       - 2-3
  • Spring Onion (chopped)        - 2-3 tbsp.
  • Garam Masala Powder           - 1 tsp
  • Pepper Powder                 - 1 tsp
  • Ghee/ Oil                     - 2 tbsp.
  • Lemon Juice                   - 1 tbsp.
  • Chicken/Veg stock/ water      - 1 3/4 cup
  • Cilantro (chopped)            - 2-3 tbsp.
  • Cashews (fried in ghee)       - 2-3 tbsp.
  • Salt to taste
METHOD OF PREPARATION STEP BY STEP


1.Wash and soak rice for about 10-15 minutes. Drain it completely using a colander or large strainer. Set aside.
Heat ghee/ oil in a thick bottomed pan, add whole spices and saute until they are fragrant. Add chopped onions and saute until translucent. Add ginger garlic paste and crushed green chilies, saute until the raw smell leaves.

2.Add pepper powder, garam masala powder and lemon juice. Saute for a minute. Add sliced mushroom, saute until the water evaporates, for about 5-6 minutes.

3.Add drained rice and stir fry for few minutes.

Add warm water/ stock and salt. Bring it to a boil over medium heat, then cook covered over medium low heat until the rice is almost cooked and dry.

If cooking in pressure cooker, cook with whistle on for 3-5 minutes on medium heat. Set aside for 10 minutes or until the pressure releases.

4.At last sprinkle some spring onion and chopped cilantro.


SERVE WITH RAITA AND PICKLE OR WITH ANY SIDES.
