Kuzhi Paniyaram is yet another one of all the South Indians proud breakfast dish that contains loads of flavor. This savory breakfast is crispy, fun to eat and delicious.

This dish is very easy to make, all you need is idli batter, some shallots, green chilies, sago (optional), and few basic ingredients in our kitchen.

INGREDIENTS
Prep Time: 15 mins

Total Time: 45-50 mins
Serves: 5-6
- Idli batter - 2 cups
- Sago/ Sabhudhana/ Chouvvari - 3 tbsp. (optional)
- Oil - 2 tbsp.
- Mustard Seeds - 1/4 tsp
- Shallots/ Small Red Onions - 8-10 (chopped)
- Green Chilies (finely chopped)- 2-3
- Grated Coconut - 3-4 tbsp.
- Curry Leaves (chopped) - 2 tbsp.
- Salt to taste

METHOD OF PREPARATION STEP BY STEP
1.Wash and soak the sayo pearls in 1/2 cup of water for 30 minutes. Grind it in a mixer to a fine paste. Set aside.
2.Heat oil in heavy bottomed pan, splutter mustard seeds and add chopped shallots. Saute until shallots turn light golden brown.
3.Add curry leaves, green chilies and grated coconut. Mix well and stir fry for a minute. Remove from heat. Let it cool.
4.Once the onion coconut mixture is cool, add the onion mixture, grinded sago and salt to the idli batter and mix well.
5.Heat a paniyaram/ unniyappam pan and pour 1/2 tsp of oil into each of the depressions.
Once the pan is hot, pour 2 tsp of batter into each hole (just below the rim). Keep the heat on medium low and cook covered until the edges turn golden brown.
Turn over and cook the other side until it turns golden brown.
