ASPARAGUS THORAN

Asparagus is one of the best vegetable to eat because it provides Vitamin A, C, E, K, Fiber, Chromium, folate and many more. This is also good against cancer. In India and many other parts of the world this vegetable is cut into small pieces and stir fried. The best combination is with Plain Rice and other sides.

  • Asparagus                      - 1 lb
  • Green Chilies (slit lenghwise) - 3-4
  • Curry Leaves                   - 1 sprig
  • Grated Coconut                 - 3/4 cup
  • Turmeric Powder                - 1/4 tsp
  • Cumin Seeds                    - 1 pinch
  • Mustard seeds                  - 1/4 tsp
  • Dry Red Chilly                 - 2-3
  • Oil                            - 1 1/2 tbsp.
  • Shallots (sliced)              - 5-6
  • Salt to taste
METHOD OF PREPARATION STEP BY STEP


1.Wash and remove the hard end of the asparagus. Chop into thin rounds.

2.Crush the grated coconut, green chilies, cumin seeds and turmeric powder. Set aside.

3.Heat oil in a thick bottomed pan and splutter mustard seeds. Add sliced shallots and dry red chilies and saute it for a minute. Add chopped asparagus and saute it for few minutes.

4.Add coarse coconut mixture, salt and curry leaves and mix well. Sprinkle a little water and cook covered for few minutes over medium low heat.

5.Open the lid and stir fry at medium heat for few minutes until the thoran is dry.

SERVE WITH PLAIN RICE AND OTHER SIDES
