One of the widely used vegetable in Kerala is long beans. This vegetable can be grown very easily in our backyard and most of the home in Kerala have at least one corner ground set aside for this. In my home it is very rarely that we would buy this vegetable from the store and we always see this dish along with rice and the rest of the sides daily.

INGREDIENTS

Total Time: 30-35 mins
Serves: 5-6
- Achinga Payaru Thoran/ Long Beans - 1 bunch
- Grated Coconut - 1 cup
- Shallots - 3-4
- Garlic Cloves - 3-4
- Green Chilies - 3
- Dried Red Chilly - 2
- Mustard Seeds - 1/4 tsp
- Curry Leaves - 1 spring
- Salt to taste
METHOD OF PREPARATION STEP BY STEP
1.Clean and chop the beans finely.

2.Crush shallots, garlic and green chilies in a mortar.

3.Heat oil in a pan and splutter mustard seeds. Add dried red chilies, curry leaves and crushed onion-chilly mixture.

4.Add chopped beans and salt. Saute it for few minutes.

5.Add grated coconut. Bring everything to the center of the pan, sprinkle some water and cook covered for 5-8 minutes over medium low heat.

6.Open the lid and toss well until the thoran is dry and done.

SERVE WARM WITH RICE
