METHI PULAO






I have been busy for the past couple of weeks, because of a Nursing exam that I have to take by the end of this month. Between studying and cooking, right now studying is given more time. But I cannot stay away from my passion which is cooking. So instead of preparing a dish worth 2-3 hours, I decided to make dishes that would only take an hour of my time. All the Pulao dishes take less than 1 hour of preparation and cooking time and that is why today's recipe is METHI PULAO.

ACHINGA PAYAR THORAN / LONG BEANS STIR FRY







One of the widely used vegetable in Kerala is long beans. This vegetable can be grown very easily in our backyard and most of the home in Kerala have at least one corner ground set aside for this. In my home it is very rarely that we would buy this vegetable from the store and we always see this dish along with rice and the rest of the sides daily.

Jackfruit Fritters is another version of PAZHAM PORI/ BANANA FRITTERS (ETHAKKAPPAM). This snack is filled with a traditional fruit in India - Jackfruit. In Asia the season for this fruit is between one of the follow months, either March-June, April-September or June-August depending on the region. Around these months every home would have some kind of snack made out Jack fruit. It never get old, nor would we ever get bored eating this fruit. Around this fruit surrounded many of my childhood memories. I am sure there are many who can relate to this.

Strawberry and Milk is one of my husbands favorite. Whenever I get normal whole milk from the store, there is always another container laying in the cart - Strawberry Milk. I have never seen anyone drink this milk so much like he does. After failing to put a stop to this store bought drink (No, I am not a bossy wife, but I would love to see my husband live healthy), I decided to take another route and that is preparing this at home. At first he was skeptical but after taking a sip, he came around and ever since then he makes this at home himself (now you might think this happened months ago, but this just happened two days ago).

QUAIL EGG MASALA DOSA







Indians love their Dosa and Idli for breakfast. Mainly South Indians as this is a comfort breakfast for them. Most of the time at my home, when ever my mom makes idli or dosa batter, then the rest of the week will be filled with the same breakfast. But for me after eating the same dish for 2 days in a row, I would always get bored. So I started to experiment with varieties of filling with plain dosa and that is how I came to prepare Quail Egg Masala Dosa. Everyone in my family especially my husband loved it.

Tomato Rasam is one of my all time favorite sides with plain rice. But there is always someone else who loves this side more than me and right now it is my brother-in-law. He is not much into Indian food and would occasionally eat rice. But every time he hears RASAM at his moms place, he would walk straight to the kitchen grab a plate of rice, other sides and rasam. I am sure my mother-in-law saw this pattern and that is why there is rasam prepared there all the time. She just wants here son to love India dishes like she does. Which parent wouldn't? :)

Tapioca Chicken Balls is a delicious snack made of tapioca stuffed with chicken filling as the name suggests. This is the first time I have created this snack and it came out just perfect. While preparing this, I felt like I was making Unnakaya (shape differs from this, so does the outer layer and the fillings). This is prefect as a 4 pm snack.

Mushroom Vegetable Pulao is a fast and simple rice dish to prepare. If you are busy or do not have a lot of time to prepare lunch or dinner, pulao is your friendly dish. All you need is a vegetable, rice and some usual spices you find in your kitchen. This vegetarian dish is one of my frequent dishes prepared at my house, either for lunch or dinner. So far everyone in my family loves eating Pulao. I try to keep it different each time by preparing varities of pulao, using any vegetable in my refrigerator like spinach, fenugreek leaves (methi), white chick peas (chana), peas, Paneer etc.
