VENDAKKA/ BHINDI MASALA

My weekends are filled with a housefull of family and we enjoy all kinds of Indian dish and one of them is Vendakka/ Bhindi Masala. Most of the kids are very reluctant to eat this dish because of the way it looks after it is cooked, but if you parents do make this dish, make sure your kids do give this a try because of the health reasons.

Vendakka also known as Okra is a great vegetable that has Vitamin A, Calcium, Vitamin B6, Vitamin C, Fiber, Folic Acid etc. This dish is prepared with indian spices and can be prepared spicy or otherwise. The best combination is with chapathi or plain rice.

INGREDIENTS


Prep Time: 15 mins
Cook Time: 20 mins
Total Time: 30-35 mins
Serves: 4-5




  • Vendakka/ Okra/ Ladies Finger     - 200 gm
  • Onion (chopped)                   - 1 medium
  • Tomatoes (chopped)                - 1 medium
  • Ginger (minced)                   - 1 inch
  • Garlic (minced)                   - 4-5 cloves
  • Red Chilly Powder                 - 1 tsp
  • Turmeric Powder                   - 1/2 tsp
  • Coriander Powder                  - 1 tbsp.
  • Garam Masala Powder               - 1 tsp
  • Amchur Powder/ Dry Mango Powder   - 1/2 tsp
  • Green Chilies (slit lengthwise)   - 2-3
  • Curry Leaves                      - 1 sprig
  • Coriander Leaves (chopped)        - 2 tbsp.
  • Oil                               - 3 tbsp.
  • Salt to taste

METHOD OF PREPARATION STEP BY STEP


1.Rinse the ladies finger thoroughly under running water. Pat dry with a kitchen towel.
Cut both the ends and slice the ladies finger into 1 inch pieces.

2.Heat 1 1/2 tbsp oil in a pan and saute them until the ladies finger is no longer slimy for about 3-5 minutes. Transfer it to a plate. Set aside.

3.Heat same pan and add remaining oil and splutter mustard seeds. Add chopped onion and saute until translucent. Add green chilies, curry leaves, minced ginger and garlic. Saute for few minutes.

4.Reduce the flame. Add chilly powder, turmeric powder and coriander powder. Mix well and saute for few seconds until raw smell is gone. Add chopped tomatoes and saute for few minutes until it turns soft.

5.Add sauted ladies finger and stir well to combine. Add 1/4 cup of water and mix well. Cook covered over medium low heat until the ladies finger is cooked. Open the lid and stir fry for few more minutes. Remove from heat.

Garnish with chopped coriander leaves.

SERVE WARM WITH CHAPATHI/ RICE
