UNNAKKAYA (SWEET COCONUT FILLED MASHED PLANTAIN FRY)








Unnakkaya is a traditional Kerala sweet dish, mostly known in Malabar. I am from Thiruvalla/ Kottayam side in Kerala and usually we don't get to try Malabar dishes. Malabar dishes in general is know for it delicious taste (mainly Malabar Biriyani) I have heard a lot about this dish from my Dads friends who are from Malabar.


Unnakkaya is prepared with smashed banana, coconut, raisins, almonds, cashews  and many other delicious ingredients. This can also be prepared as a vegetarian snack by excluding eggs (I have added eggs). This is definitely a fun weekend family snack, which all the kids would love.

INGREDIENTS

  • Ripe Plantains/ Nenthrapazham    - 5
  • Grated Coconut                   - 1 1/2 cups
  • Raisins                          - 2 tbsp.
  • Cashews (chopped)                - 3 tbsp.
  • Almonds (chopped)                - 3 tbsp.                                        (optional)
  • Cardamom Powder                  - 1/2 tsp
  • Sugar                            - 3 tbsp.                                        or as needed
  • Egg (lightly beaten)             - 1
  • Salt                             - a pinch
  • Ghee                             - 2 tsp
  • Oil for deep frying

METHOD OF PREPARATION STEP BY STEP



1.Wash and cut plantains into 2-3 pieces. Steam them until soft and cooked. Set aside. Let it cool.

2.Once it is hot enough to handle, remove the outer thread. Mash well with a fork or with your hands without any lumps. Set aside.

(If you feel the consistency is loose, refrigerate it until you finish with the filling preparation.)

3.Beat the egg with sugar. Set aside. Heat 1 tsp ghee in a thick bottomed pan. Roast cashew and raisins until the cashews turn golden brown and raisins plumped up. Drain onto a paper towel/ plate. Set aside.


4.Heat another tsp of ghee and add grated coconut and stir for 5 minutes till the moisture is absorbed and the coconut is dry.

Add beaten egg sugar mixture, stir well over medium heat until the mixture is dry for about 2-3 minutes.

5.Add ghee roasted raisins, cashews and almonds. Combine well. Sprinkle cardamom powder. Remove from heat. Set aside to cool.


6.Grease your palm and take a little portion of plantain mixture (a lemon sized portion).

Flatten it with your fingers. Spoon in 2 tsp of coconut egg nuts filling. 

Seal the edges and roll into a cylindrical shape with elongated, pointed edges (spindle shaped).
Do the same process for the remaining portions.

7.Heat oil in a thick bottomed pan. Deep fry it over medium heat until each of them evenly turn golden brown.
Drain on to a paper towel.

SERVE HOT WITH HOT TEA/ COFFEE
