IDIYAPPAM/ NOOL APPAM/ NOOL PUTTU

Idiyappam is one of the traditional dish in Kerala. It is Delicious and tasty with the combination of Egg curries, stew, vegetable curry or any other curry. The texture on this dish is very soft and it looks like rice noodles. Most of the kids will love this dish because it looks like noodles.

This dish is prepared with a specially designed device called Idiyappam maker/ press. You can still make this dish by using a pasta maker.

INGREDIENTS


Prep Time: 15 mins
Cook Time: 20 mins
Total Time: 35-40 mins
Serves: 2-3


  • Roasted Rice Flour              - 2 cups
  • Boiling Water                   - 2 cups
  • Grated Coconut                  - 1/2 cup
  • Oil                             - 1 tsp
  • Ghee                            - 1 tsp
  • Salt to Taste
METHOD OF PREPARATION STEP BY STEP


1.Boil water in a sauce pan, add salt and ghee into it. Pour boiled water little by little to the rice flour and mix well with a wooden spatula. Let it cool for few minutes.

2.When it is warm enough to handle, knead well to form a smooth dough. Set aside for 15-20 minutes.

3.Lightly grease the Idiyappam plate/ Idli mold with oil to prevent sticking. Take a fist full of dough and form into a log and gently fill this dough into the Idiyappam press and close the lid.

4.Spoon in some grated coconut onto the Idli molds and then Squeeze the dough on top of the grated coconut of the Idiyappam plate/ Idli mold in circular motion. Repeat the same for the rest of the dough.

6.Steam cook in a idle maker/ steamer for 10-15 minutes or until done.

Notes: 
You can make Sweet Idiyappam. Add sugar and a pinch of cardamom powder into the grated coconut. Squeeze a layer of Idiyappam on to the mold, then top it with some sugar grated coconut mixture. Again add another layer of Idiyappam on top of that. And then steam as per the above process.

SERVE WARM WITH EGG MASALA, QUAIL EGG ROAST OR ANY OTHER CURRIES

  1. Its just decorative. The process is same as murukulu but we directly deep fry in oil. This is streaming process but I think it will also make yummy too
