BANANA BUTTERMILK FLUFFY PANCAKES








This recipe is the best way to change up your breakfast from the usual plain pancakes. Banana Buttermilk Fuffy Pancakes says it all in the name itself, sweet, delicious, fluffy and tasty. This family breakfast is simple and easy to prepare.



Preparing the table for breakfast I had to make sure there were strawberries, blueberries, maple syrup and honey because my husband loves maple syrup and I love honey. Both the syrup and honey have a taste of its own with this pancake and both are very delicious and satisfying.

INGREDIENTS


Prep Time: 10 mins
Cook Time: 15 mins
Total Time: 20-25 mins
Serves: 3-4




  • All Purpose Flour                - 1 1/2 cup
  • Baking Powder                    - 1 tsp
  • Baking Soda                      - 1/2 tsp
  • Ground Cinnamon (optional)       - 1/2 tsp
  • Sugar                            - 1 tbsp
  • Ripe Banana                      - 2 medium
  • Egg                              - 1 large
  • Buttermilk                       - 2 cups
  • Salt                             - 1 pinch
  • Unsalted Butter (melted)         - 2 tbsp.

METHOD OF PREPARATION STEP BY STEP

1.Mash peeled banana with a fork until smooth. Set aside.

2.In a bowl, whisk together flour, baking powder, baking soda, sugar, salt and ground cinnamon until combined.

3.In another bowl, use a whisk or fork to combine the butter milk, melted butter and egg until combined. Add mashed banana and mix well.

4.Pour the buttermilk egg butter mixture into the dry ingredients and stir well until well combined. Add a little more water or buttermilk if needed.

5.Heat a tawa/ skillet over medium heat, lightly brush with oil. When the tawa is hot, pour a ladle full of batter onto the skillet. Spread a little.
When the edges start to dry and bubbles start to appear on the pancakes, flip it and cook until both the sides are lightly browned.


Notes: 
  • You can substitute Buttermilk with Whole milk or 2% milk.
  • Instead of Ground cinnamon you can add 1 tsp of Vanilla Extract.

SERVE IMMEDIATELY WITH SYRUP, BANANA SLICES AND BERRIES
