UNNAKKAYA (SWEET COCONUT FILLED MASHED PLANTAIN FRY)








Unnakkaya is a traditional Kerala sweet dish, mostly known in Malabar. I am from Thiruvalla/ Kottayam side in Kerala and usually we don't get to try Malabar dishes. Malabar dishes in general is know for it delicious taste (mainly Malabar Biriyani) I have heard a lot about this dish from my Dads friends who are from Malabar.

PAZHAM PORI/ BANANA FRITTERS (ETHAKKAPPAM)

What do you call for banana fritters? Ethakkappam or pazham pori? Since I am from thiruvalla, we used to call it as ethakkappam. Banana fritters is a weakness for most of the malayalees and it holds a special space in all the malayalees hearts because you get to buy banana fritters everywhere in Kerala like in all the restaurants, bakeries, road side snack carts, canteens etc.

My weekends are filled with a housefull of family and we enjoy all kinds of Indian dish and one of them is Vendakka/ Bhindi Masala. Most of the kids are very reluctant to eat this dish because of the way it looks after it is cooked, but if you parents do make this dish, make sure your kids do give this a try because of the health reasons.

MASALA DOSA








There is not a day in my home where we miss breakfast. I am a breakfast person. I loose energy and get cranky if there is no food in my belly in the morning. Back in the day, whenever I oversleep on a work day I wouldn't be able to eat from home, so my breakfast on those days were from the hospital canteen. I would sit and read the menu from top to bottom like i was about to take an exam, but them eventually I would end up asking for Masala Dosa.

If you stay at any hotel, they always have a choice of this combo in the morning along with orange juice. Scrambled Eggs and Roasted Potatoes is a world wide first choice for breakfast. Recently I prepared Quail Egg Roast, which is entirely different than Scrambled, they both have a unique taste as they are prepared different.

Quail Egg is the size of a large grape (which is very small) but it is slightly very nutritional compared to a regular egg because it contains  a lot of vitamins and minerals. Vitamin A, B complex, D, calcium, iron, zinc, copper, potassium and many more are some of the health facts that this egg holds. I recently found after reading about this egg, that it is also good for the healing of the body after a trauma and the biggest benefit last but not least is that it does not have any bad cholesterol.

I have been posting lots of thorans and other Kerala side dishes here and that is only because without these side dishes we malayalees would have a hard time eating. Aside from rice and chamanthi keralities love their mzhupuratti and thoran (stir fry).

PALAPPAM (KERALA STYLE LACED RICE PANCAKE)





Today I am going to make Kerala style laced rice pancakes called Palappam. Palappam is very soft at the center and crispy at the sides, a very delicious dish in Kerala, which is made from fermented rice and coconut milk. Palappam has become a popular staple in the traditional cuisines of Kerala. Palappam is commonly served  with various curries and stews.

CATFISH CURRY (KAARI/ MUSHI MEEN CURRY)

In Kerala, Catfish is know as Kaari or Mushi meeen. When ever I see this fish in the market, I usually get scared because I had an incident with this fish when I was young. In my dads hometown (Kottayam) we had a property that was a rice field. During vacation me and my friends would play in the paddy field and since I loved the surroundings I would some days go by myself and just sit by the field. The place where my house is, it is filled with rubber trees which makes the area not fun. The paddy field was full of greenery and I always felt like I was in a different world there. One fine day as I was sitting, dangling my feet in the water and day dreaming, I felt something wiggle through my feet and all of a sudden something bit my foot and it stated to bleed. At first I thought it was a snake, but then my friend told me it was a catfish. It was long, slimy and had very long whiskers. This one incident made me cringe every time I saw a catfish and since then I have never go back to that field. There was one person who did not really care what or who bite me, as this person loved this fish curry more than she loved me (just kidding). That is my sweet loving mom.

ÇOPYCAT PANERA'S CHEDDAR BROCCOLI SOUP







The very first time I got to the US, Panera's was the best place to relax in the evening. Among many food types that I liked there, Cheddar Broccoli Soup was on top of the list. I just could not stop eating. This soup is thick in cheese, which makes it very delicious. After going to Panera's at various times for about 3 months, a thought occured to me. Why don't I just make this at home?

ALOO PARATHA (POTATO STUFFED PARATHA)







One of the most popular North Indian dishes is Aloo Paratha (Potato stuffed paratha). This dish is prepared with stuffed potatoes and is very quick to make. Like most of the North Indian dishes I blog about here, this one also I tried for the first time in Bombay. I just loved it from the first bite and kept going back for more. With the right combination this paratha is the best. I like it best with yogurt/ raita. You cannot go wrong when preparing this dish. All you need to do is make sure you have boiled potatoes and the right spices/ ingredients. I would say this is good for breakfast, lunch and dinner but I love it during dinner.
Most of the kids would eat this instead of the regular food because of the stuffing inside. This is a very good way to make sure our kids enjoy eating.

KAPPALANDI MITTAI (PEANUT TOFFEE BAR)








As a kid, back in the day when ever I used to get money from home (pocket money from dad) and from other family members, I would collect them. Do you know why?? Well it was to buy Kappalandi Mittai (Peanut Toffee Bar). This usually happened right after school. I would wait to hear the school bell ring, and once it does, my feet would be racing towards the sweet shop. Since my school was near by home, I would walk back home enjoying my hard earned Mittai (toffee bar). (started at grade 2, did not stop while studying Nursing and still continues today) I am very sure most of you have a memory similar to this. Even now things have not changed much, every now and then when we go to the Indian store, one thing that always enters the shopping cart is this Mittai (of course without my husbands knowledge).

We all love mangoes especially in my family and that is how this dessert came to be. Mambazha Pradhaman is one of Kerala's traditional desserts mostly made around the festival times. This dessert is prepared using many fun ingredients but mainly one fruit - delicious Mangoes.
Kerala is widely known for PAYASAMS. There are so many varieties and variations of payasam and some of the popular ones are, Pal Payasam, Ada Pradhaman, Semia Payasam, Paripppu Payasam etc. (trust me...there are many more delicious payasams).

UNAKKA CHEMMEEN CHAMANTHI | DRIED PRAWNS CHUTNEY

Today I am going to make my husbands favorite chutney. When ever I get tired after work I prefer making chutney, and if I tell my husband what I am about to prepare, he would yell out Chemmeen Chamanthi. He just loves it. Dried Prawns Chutney also know at my house and in Kerala as Unakka Chemmeen Chamanthi is a delicious side dish that goes along with rice, boiled tapioca, colocasia, etc. I stumbled upon dried prawns while walking through the store to find banana leaves for Ela Ada (banana leaf rice cake) and got excited seeing this instead. This is every Keralites favorite dish.

KAPPA PUZHUNGIYATHU (BOILED TAPIOCA WITH HOT GREEN CHILLY DIP)






This is a recommended!! I am sure by now there are many who are not sure what this dish is by reading the name or by looking at the picture. This is yet another one of Kerala's favorite dishes. When it comes to breakfast, 4 pm snacks and dinner, every malayalee would at least consider making this during those times. The best combination is Kappa Puzhungiyathu and Kanthari Chammanthi(step for this too is given below) or any other spicy chutney and or even with fish curry. Again I recommend everyone try this at least once.
Since back in the days during my childhood I have loved this dish. I remember always telling my mom to add extra Chutney to match with how many Kappa's pieces I have and she would not give me as much says it was so spicy.

After eating various dishes from Mumbai, I have become a complete fan of North Indian dishes. Duuring my training I did not have much time to cook some of the days, and that is when I would prepare Aloo Gobi and Paratha which was simple, easy and the best combination.

It was that time of the day to think of what fruit to eat or drink. After lots of requests from my family, I jumped online and the first fruit that I saw was blueberry. I turned around and looked at the Kitchen counter and couple of bananas caught my eye and that is how I got to this smoothie. What better drink than Blueberry banana smoothie. Blueberry is a healthy drink because it is filled with Vitamin C, Fiber and Antioxidants.
