STRAWBERRY CHOCOLATE CAKE




Who does not love Strawberry or Chocolate?
Delicious, sweet and tasty is what will come to mind thinking of this cake.




 This is an easy recipe to follow and can be made for birthday and family parties. This cake is another one of my best cakes. A cake perfect for winter, as we spent more time indoors. The sweet smell from the baking still gets everyone in my family lined up in front of our kitchen table every single time. It definitely leaves a smile on my face seeing this.



There are 4 steps- from making the strawberry cake to garnishing it with chocolate covered strawberries.
Try to include a family member while making this cake. Make it a fun family memory.

FOR THE STRAWBERRY CAKE

METHOD OF PREPARATION

1.Preheat oven to 350 degree Fahrenheit. Grease the baking pan. 
Rinse the strawberries well and gently dry them. Remove the stems an chop them up. Put them in a zip lock bag and crush them up with meat tenderizer or put them in a blender for few seconds to get crushed. Keep it aside.

2.Sift all purpose flour and baking powder in a bowl, beat butter and sugar with an electric mixer until light and fluffy. 

3.Add gelatin powder and beat well. Add eggs one at a time and beat well after each addition on medium speed.

4.Stir in vanilla extract. Add all purpose flour in three addition along with the milk. Beat well for few minutes on medium speed.

5.Add smooshed strawberries and gently stir with your hand/ spatula.

6.Divide the batter between prepared pans and smooth with back of the spatula.

7.Bake it at 350 degree Fahrenheit for 35-40 minutes or until the toothpick inserted comes out clean. Allow cake to cool completely on a wire rack before adding the frosting and ganache.



FOR THE CHOCOLATE BUTTERCREAM FROSTING

METHOD OF PREPARATION

1.Put the chopped chocolate in a heatproof bowl. place this bowl over a pan of barely simmering water and allow the chocolate to melt. Stiring occasionally.

2.In a bowl, beat butter smooth and fluffy. Add confectioner's/ powdered sugar  and beat well until well combined. Add whipping cream and beat well for few minutes. Blend in vanilla extract. Add melted chocolate. Beat everything well until light and fluffy.

3. Spread it smoothly on the cake.


FOR THE GANACHE

METHOD OF PREPARATION

1.Heat the heavy whipping cream in a saucepan or microwave it (30 seconds) until you see tiny bubbles appearing around the edges. Remove from heat and pour it over the chopped chocolate. Let it stand for 5 minutes.Mix it well. Add the butter. Keep mixing until it is turned to a smooth and silky mixture.

3.Place the wire rack on a clean tray or 13x9 inch pan,so that the tray will collect any excess ganache that flows down from the cake. Transfer the frosted cake on the wire rack. Pour the ganache over the cake. Refrigerate it for a minimum of 1 hour.

FOR THE CHOCOLATE COVERED STRAWBERRY

METHOD OF PREPARATION

1.Rinse strawberries and dry them with paper towel. Line cookie sheet with wax paper.

2.Chocolate and shortening/ vegetable oil in a bowl placed over a sauce pan of simmering water. Melt the chocolate completely, stir occasionally. Remove from heat.

3.Dip each strawberry into chocolate mixture. Place on waxed paper. Refrigerate chocolate dipped. Strawberries for 30 minutes or until the chocolate is firm.

(store covered in refrigerator until ready to serve because chocolate will soften more quickly at room temperature.
Garnish the ganached strawberry cake with chocolate covered strawberries.

CUT IT INTO SMALL PIECES AND SERVE
