PINEAPPLE PACHADI




OK, some of you might not know this dish. I prepared this food to make sure everyone knows about some of the sweet Indian dishes. What I learned cooking in my Kitchen is that there is no culture for food. Even though we all call different recipes by their country names, food is food regardless of where it was known from.

Pachadi is a Keralite dish served as a side dish for rice. It is usually made using any of the vegetables like beetroot, cucumber, ladies finger, bitter guard etc and fruits like pineapple, mango, ripe plantain etc. Just like yogurt salad, pachadi falls a midway between a sauce and a relish.




Pineapple pachadi is a sweet sour and tangy dish which will be loved by everyone especially those from God's own country - KERALA. Go ahead and give it a try. 

METHOD OF PREPARATION STEP BY STEP


1.Peel the pineapple and remove the skin and pines (eyes) thoroughly. Slice it into small pieces.

2.In a blender, combine grated coconut, green chilly, cumin seeds and blend it into a smooth paste. Set aside.
Cook the pineapple with little water (approximately 4-5 tbsp) along with 1 tsp sugar, turmeric powder and salt over medium heat until the pineapple pieces are soft. If you want more sweet pachadi, go ahead and add more sugar as your taste.

3.Reduce the flame and add the coconut paste. Mix well and bring it under a boil for few minutes. Remove the pan from the fire and let it cool for few minute. 

4.Add the beaten yogurt and mix well. Adjust the salt.

5.Heat coconut oil in another pan, add mustard seeds. When it starts to splutter add sliced shallots, dry red chilly, curry leaves and saute it for a few seconds until the shallots are golden brown color.

6.Pour this seasoning over the pineapple pachadi and mix well.

PINEAPPLE PACHADI IS READY.
SERVE WITH HOT RICE
