IDLI (STEAMED RICE CAKE)




I am preparing today one of top most popular breakfast dishes in South India. The dish is know as Idli. This dish is best know with sambar and chutnies like coconut chutney, tomato chutney, etc. If you go to any hotels or restaurants  in South India for breakfast, idly will be on the menu as the first preference. The softness and its texture is what got this dish loved by most of the south Indians and at the same it since it is prepared by steaming, this way is very healthy.
Every day my mom used to make Idly for breakfast when I was a kid and I used to hate the same thing but now I wish I could have it every day. I need to get my mom here to the US. I am getting emotional now. Time to get started with this recipe.

Lets go ahead and make Idly step by step.


METHOD OF PREPARATION STEP BY STEP


1.Wash the rice and black gram (uzhunnu) thoroughly under running water. Soak the rice and black gram in different bowl. Soak for about 5-7 hours. Drain water from the rice and black gram. Transfer the rice into a grinder/ mixer.

2.Grind to a smooth paste and pour into a big container. Likewise grind the rice and 2 table spoon of the cooked rice into a smooth paste. Pour it to the black gram (urad dal) batter. Ad enough salt and mix everything well. Cover and keep this aside in warm place for about 10-12 hours till the batter rises or ferments well. 

4.Take Idly molds and smear it with a little oil. Heat water in the Idly cooker/ pot. Fill the batter in the Idly molds and place the idly molds and cover with a lid.

5.Cook the Idly over a medium heat for about 15-20 minutes. Remove from heat. Let the Idly's cool for a while. Then remove the idly from the mold.

SERVE WITH CHUTNEY OR SAMBAR
