CHERRY VANILLA CUPCAKE

Hi there,
Food is a very important part in my family. It feels good to see everyone have a smile on their face with my kitchen recipes. This is one of the ways I express my love. After baking the Hidden Heart Cake I have been thinking on what to make next. For couple of days I have been thinking and I finally reached a perfect, delicious and tasty recipe - CHERRY VANILLA CUPCAKE.

All the kids love cherries, so that is why I decided to make this cupcake. The highlight of this cupcake is the frosting itself. Instead of the usual frosting, I thought of bringing out the cherry flavor. All the cupcakes have been decorated with cherries as this will grab all the kids attention. This is one of the best recipes for family parties. 

FOR THE CUPCAKES

METHOD OF PREPARATION 

1.Preheat oven to 350 degree. Sift all purpose flour, baking powder and salt.

2.In a bowl, beat butter and sugar with electric mixer on low speed until light and fluffy.

3.Add eggs one at a time and beat well after each addition. Stir in Vanilla and  almond extract until combined well.

4.Add flour mixture in three portions along with the buttermilk, beating on medium speed until well blended.

5.Spoon in batter into cupcake lines filling 2/3 full. Bake it at 350 degree Fahrenheit for 15-20 minutes until a toothpick inserted at the center comes out clean. Allow to cool on a wire rack for 30 minutes and frost the cupcake with cherry frosting.

FOR THE CHERRY FROSTING

METHOD OF PREPARATION STEP BY STEP

1.In a large bowl, cream the butter and cream cheese with an electric mixer on medium speed until smooth and fluffy. Beat in powdered sugar until it is creamy and smooth.

2.Beat in cherry juice or jam, vanilla extract and almond extract. Add in whipping cream and beat well until frosting reaches a spreadable consistency. 

3.Frost the cupcakes using piping bag or spread the frosting with a knife. Decorate it with cherries.
