KERALA PAROTTA



I would never recommed you to eat Parotta every day. Once a month is fine if you are craving for it. I say this because of health reasons. One of the main food eaten in India is Parotta. I have seen people after work heading to thattu kada (side street shops) to order this dish - parotta with beef fry each and every day. 

VELLAYAPPAM/ KERALA RICE PANCAKES



There are times when we all start cooking one dish while thinking of another. That is how I ended making this dish. Vellayappam is a breakfast dish that is most famous in Kerala and to all the malayalees. 
Here is a fun food fact, kerala is a very small state in India, but it is well known for its huge varieties of  delicious foods like Kappa and Meen curry, Puttu and Kadala curry, Palappam and chicken curry, Vellayappam and beef stew, Karimeen Pollichathu, Mutton Dum Biriyani, Thalassery Biriyani etc.

When I used to study in North India, I would always hear about Spinach Paratha but never had the opportunity to try it out. Now that I have my very own kitchen, it was time for me to give it a try. After taking my first bite, what I found was that it does not taste much different from the regular paratha but is loaded with lots of nutrients because of the spinach.

STEAMED RICE DUMPLINGS (KOZHUKKATTA)




Yesterday morning I finally prepared one of my favorite childhood snack. Steamed rice dumpling is one of the traditional and well know breakfast dishes in Kerala. Mixed in with coconut and jaggery this is a favorite sweet that holds a place in my heart and kitchen.

PINEAPPLE PACHADI




OK, some of you might not know this dish. I prepared this food to make sure everyone knows about some of the sweet Indian dishes. What I learned cooking in my Kitchen is that there is no culture for food. Even though we all call different recipes by their country names, food is food regardless of where it was known from.

Pachadi is a Keralite dish served as a side dish for rice. It is usually made using any of the vegetables like beetroot, cucumber, ladies finger, bitter guard etc and fruits like pineapple, mango, ripe plantain etc. Just like yogurt salad, pachadi falls a midway between a sauce and a relish.

CUPCAKE CHOCOLATE

I have been cooking all day to bring out new content and recipes to this blog. Since yesterday I have been thinking of what to write, how to write, what to cook, what to bake and how to interact with everyone. After cooking couple of dishes I have decided to go ahead and bake a cake for my satisfaction. It was time to change it up and get a sweet smell in the kitchen, away from all the spices.

STRAWBERRY CHOCOLATE CAKE

Delicious, sweet and tasty is what will come to mind thinking of this cake.


VARUTHARACHA KADALA CURRY/ BLACK CHICKPEAS CURRY





As I mentioned in an earlier post, puttu and kadala (black chickpeas) curry is the one of the most favorite breakfast food for all the malayalees. This curry can go best along with chapati, dosa, appam and rice. 
Chickpeas are the greatest source of protein, fiber, folate, iron, phosphate, magnesium, zinc and vitamin K and helps in building and maintaining bone structure and strength. 
Black chickpeas (Kadala) curry can be made anywhere from mild to hot, depending on how much spice you prefer. I can almost taste this dish.


Let us go ahead and learn how to make Kadala curry



METHOD OF PREPARATION STEP BY STEP


1.Clean the black chickpeas (kadala) until the water is clear and soak it overnight. Cook the chickpeas in a pressure cooker over medium heat for about 4-5 whistles or until the chickpeas is soft and drain the chickpeas and keep it aside.

2.For roasting, heat 1 tsp of oil in a pan and add the coriander seeds, cardamom, cloves and sliced shallots and saute it for a minute. Add the grated coconut and roast until it turns golden brown color. Remove from heat and let it cool.

3.Then grind this roasted mixture in a blender to a fine paste.

4.In a thick bottomed pan heat oil and splutter the mustard seeds. Add sliced onion and saute it until the onion is translucent. Add minced garlic, ginger and coconut slices and saute it until it turns light golden brown.

5.Add kashmiri chilly powder and turmeric powder. If you didn't add whole coriander while dry roasting the grated coconut, you can add coriander powder now. Saute it for a few minute until the raw smell of the spices are gone. Add chopped tomatoes and saute it until the tomatoes are soft.

7.Add the coconut paste and saute it for a minute.

8.Add the reserved water from the cooked chickpeas. Then add the cooked chickpeas. Mix well, cover and cook for a few minutes until the gravy is thick.

9.Heat 1 tbsp of oil on another pan and splutter mustard seeds. Add curry leaves, shallots, dry red chilies and saute it until the shallots turns golden brown. Pour this tempering over the chickpeas (kadala) curry and mix everything well. Remove from heat.


SERVE WITH PUTTU, APPAM,CHAPATHI OR RICE

CHERRY VANILLA CUPCAKE

Hi there,
Food is a very important part in my family. It feels good to see everyone have a smile on their face with my kitchen recipes. This is one of the ways I express my love. After baking the Hidden Heart Cake I have been thinking on what to make next. For couple of days I have been thinking and I finally reached a perfect, delicious and tasty recipe - CHERRY VANILLA CUPCAKE.

All the kids love cherries, so that is why I decided to make this cupcake. The highlight of this cupcake is the frosting itself. Instead of the usual frosting, I thought of bringing out the cherry flavor. All the cupcakes have been decorated with cherries as this will grab all the kids attention. This is one of the best recipes for family parties. 

FOR THE CUPCAKES

METHOD OF PREPARATION 

1.Preheat oven to 350 degree. Sift all purpose flour, baking powder and salt.

2.In a bowl, beat butter and sugar with electric mixer on low speed until light and fluffy.

3.Add eggs one at a time and beat well after each addition. Stir in Vanilla and  almond extract until combined well.

4.Add flour mixture in three portions along with the buttermilk, beating on medium speed until well blended.

5.Spoon in batter into cupcake lines filling 2/3 full. Bake it at 350 degree Fahrenheit for 15-20 minutes until a toothpick inserted at the center comes out clean. Allow to cool on a wire rack for 30 minutes and frost the cupcake with cherry frosting.

FOR THE CHERRY FROSTING

METHOD OF PREPARATION STEP BY STEP

1.In a large bowl, cream the butter and cream cheese with an electric mixer on medium speed until smooth and fluffy. Beat in powdered sugar until it is creamy and smooth.

2.Beat in cherry juice or jam, vanilla extract and almond extract. Add in whipping cream and beat well until frosting reaches a spreadable consistency. 

3.Frost the cupcakes using piping bag or spread the frosting with a knife. Decorate it with cherries.

VALENTINES HIDDEN HEART CAKE | SURPRISE YOUR VALENTINE WITH THIS HIDDEN LOVE




VALENTINE'S DAY.....What more can I say about this day? It is always fun and exiting to enjoy the day with the love of your life. A special moment to share and be together. Mine is extra special because I will be spending time with my hubby. To me, Valentine's Day is all about being with my husband and making that one day extra extra special for both of us. Hopefully he does not forget to buy me a gift. I have never really celebrated Valentine's Day for just that day because what I have learned is to create and make the other person feel important and loved every single day.

What I have made in secret today is a cake full of hearts hidden inside. If you truly want to bring out the meaning of valentines day and surprise your loved one, then you should definitely make this cake. There are three steps to this wonderful cake. If you follow each of the steps with utter care then your cake will look and taste beautiful.

FOR THE RED HEART CAKE


METHOD OF PREPARATION 

1.Preheat the oven to 350 degree Fahrenheit. Grease the baking pan with butter. 
Blend the strawberries in a blender and strain it to get the smooth strawberry puree. Keep it aside. 

2.Sieve all purpose flour and baking powder. Keep it aside in a bowl, beat butter and sugar with an electric mixer on low speed until its light and fluffy. 

3.Add strawberry jello powder and combine well.Beat egg one at a time for few minutes. Scrape the bowl after each addition. 

4.Stir in vanilla extract. Add strawberry puree and stir well. If you want you can add few drops of red coloring to this to make your cake look more reddish.

5.Add flour in three portions and add milk occasionally in between. Beat well on a medium speed for few minutes until smooth and creamy.If you want your heart cake really red,you can add few drops of red coloring and beat lightly until the color is blended evenly in the batter.

6.Pour the batter into the 13X9 inch  (larger pan)greased baking pan to get a thin sheet of cake. Bake it at 350 degree Fahrenheit for 45 minutes or if a toothpick inserted comes out clean. Cool it completely on a wire rack. Once the cake is completely cool, refrigerate it until we start to prepare the chocolate cake.

When you get everything ready to make the chocolate cake remove the red cake from the refrigerator and slice the cake evenly. Take the heart shaped mold and cut out gently from each slice of the cake. Keep it aside.(I got about 15 hearts)

FOR THE CHOCOLATE CAKE



METHOD OF PREPARATION 

1.Preheat the oven to 350 degree Fahrenheit. Grease the loaf pan. Swift the flour, baking powder, salt,  cocoa powder and coffee powder. 

2.In a bowl, beat the sugar and butter with an electric mixer on low speed until light and fluffy.

3.Add in eggs one at a time and beat well on medium speed after each addition. Stir in vanilla extract.

4.Add the dry ingredients in three portions along with the milk and beat well on medium speed.

5.Pour 1/4 of the batter into the loaf pan. Smoother the surface with back of the spatula. Now place the heart shaped red cakes next to each other and pack them close. Leave 1 inch gap at both the corners for the chocolate batter to flow through and hide the red hearts. Pour the remaining chocolate batter slowly along the sides and over the red hearts.

6.Bake it at 350 degree Fahrenheit for 45-50 minutes or if a toothpick inserted at the center of the cake comes out clean.
Cool in the pan for 15 minutes and remove to a wire rack.

FOR THE GANACHE


METHOD OF PREPARATION 
1.Heat the heavy whipping cream in a saucepan or microwave it (30 seconds) until you see tiny bubbles appearing around the edges. Remove from heat and pour it over the chopped chocolate. Let it stand for 5 minutes.

2.Mix it well. Add the butter. Keep mixing until it is turned to a smooth and silky mixture. 
3. Spread it over the cake. Refrigerate it for a minimum of 1 hour.

CUT INTO SMALL PIECES & FIND THE HIDDEN HEART
