POTATO STIR FRY (MEZHUKUPURATTI)





Potato is a vegetable that always holds a special place in our kitchen. Potatoes can be cooked in many ways, such as curry, stir fried, baked, grilled, mashed etc. I am sure this is a very much loved vegetable and is cooked at least once in a week in all our kitchens. In that my favorite potato dish is stir fried potato. Most of the school going students love to have stir fried potato in their lunch box everyday. 

Potato mezhukkupuratti (stir fried potato) is an all time favorite side dish for most of the malayalees. Stir fried potato is a simple and delicious dish made using sliced potatoes and basic spices.
Let's get started on how to make potato mezhukkupuratti (stir fried potato).

METHOD OF PREPARATION IN STEP BY STEP



1.Wash and peel off the potatoes. Slice the potato into thin long strips and leave the slices in water to avoid discoloration of the potato.

2.Take a pan and add sliced potatoes, green chilies, turmeric powder and salt into the pan. Pour 1/4 cup of water and bring this to boil over a low flame until the potato is half cooked. Stir occasionally. Remove from heat and let it cool for sometime and shake the pan lightly to remove slices that are stuck to the bottom of the pan. 

3.Heat a pan over medium flame. Pour oil and splutter the mustard seeds. Add sliced potatoes along with the dried red chilies and curry leaves. Add red chilly powder and salt, and mix everything well gently.
Adding chilly powder is optional, if you like yellow colored potato fry, no need to add chilly powder. I added chilly powder, because I like my potato stir fry in orange tangy color.

4. Stir occasionally over medium heat until the potato slices are crispy and golden yellowish color. Remove from heat and drain the excess oil.

SERVE WITH RICE AND OTHER SIDE DISH.
