POTATO AND EGG CURRY (KERALA STYLE )






Today I will be blogging about how to make Kerala style egg and potato curryThis dish is popularly served with Kerala style breakfast dishes like palappam, chapati, idiyappam etc. Adding fresh coconut milk into it making this curry more delicious.

INGREDIENTS

Cook Time: 20 mins

Total Time: 
35-40 mins
Serves: 2-3
  • Egg (hard boiled)              - 2
  • Potato (boiled and sliced)     - 1 medium
  • Onion (sliced)                 - 1 medium
  • Green Chilly (slit lengthwise) - 4
  • Ginger (minced)                - 1 inch
  • Garlic (minced)                - 5 cloves
  • Tomato (chopped)               - 1 medium
  • Coconut Milk                   - 3/4 cup
  • Coriander Powder               - 1 tbsp.
  • Turmeric Powder                - 1/4 tsp
  • Mustard                        - 1/4 tsp
  • Curry Leaves                   - 1 sprig
  • Dry Red Chilies                - 2
  • Oil                            - 4 tbsp.
METHOD OF PREPARATION STEP BY STEP



1.Boil the eggs and potato, remove the egg shell and peel the potato and cut them into small pieces.



2.Heat oil in a pan, add sliced onion and green chilly and saute for few seconds. Then add minced garlic and ginger into it and saute for few minutes til the onion get translucent.


3.Add turmeric powder and salt as needed and saute it. Add chopped tomatoes into the pan and saute it. Then add coriander powder, garam masala powder, a little chilly powder and egg masala powder (if u have) and saute it for a minute.

4.Add sliced potatoes and saute it. Then add 1/2 cup of water and mix everything well. Then cover and cook for few minutes.

5.Take off the lid and switch to low flame, then add coconut milk and stir everything well. I used ready made coconut milk here. Do not boil the curry after adding coconut milk into it. 

6.Take another pan for seasoning. Heat a pan, add 1  and half tablespoon of coconut oil and splutter the mustard. Add sliced red onion, curry leaves and dry red chilly and saute it well. Add this seasoning mix into the curry and mix everything well. 


SERVE WITH KERALA STYLE APPAM/ CHAPATI/ BREAD
