MUSHROOM EGG (STIR FRY) THORAN






Every time I miss my mom, the first thing that comes to my mind is food. The most I miss is her mushroom egg thoran (mushroom and scrambles egg stir fry).It brings back a lot of my childhood memories from back in Kerala. During the monsoon rainy season my mom would go out to our backyard and pluck out fresh mushrooms that breakout and grow at that very moment due to heavy rain and thunder. It was the most delicious thoran I have ever had. Since then I have attempted to make this thoran like she does but it is always extra special when she makes it.

INGREDIENTS

  • Mushroom                   - 1 pack
  • Egg                        - 2
  • Oil                        - 1 tbsp.
  • Green Chilly               - 4
  • Onion                      - 1 medium
  • Mustard Seeds              - 1/2 tsp
  • Turmeric powder            - 1/2 tsp
  • Curry Leaves               - 1 sprig
  • Grated Coconut             - 1/2 cup
  • Garam Masala Powder        - 1 tsp
  • Salt to taste
