DRUMSTICK LEAVES (MURINGAYILA) CURRY





Drumstick leaves (Moringa leaves) curry is my all time favourite side dish for rice. Since I moved away from Kerala, I am always excited to see moringa leaves in Indian stores here in the US. Moringa leaves curry is the kind of food that soothes my mind and reminds me about my good old memories in my home back in Kerala. The drumstick tree is a common sight in the backyards of every houses in Kerala. We got two drumstick trees in our backyard and when we get to the cooking part, me and my family would sit together and separate the moringa leaves from its stems. I really miss those days.
Drumstick leaves (moringa) curry is very delicious and at the same time very healthy.

The leaves, drumstick and even the flower got nutrients that would benefit our health.

Let's get started on how to make Muringayila (drumstick leaves) curry.


RECIPE IN STEP BY STEP
1.Pluck each of the drumstick leaves from its stem and clean the drumstick leaves thoroughly under running water. Let it dry on a colander/ strainer. 
Blend it together the ingredients mentioned for grinding to form a fine coconut paste.

2.Heat a pan over a medium heat. Add drumstick leaves along with 1/2 cup of water. Bring this under a boil for a few minutes for the drumstick leaves to get cooked.

3. Reduce the flame to low and add the coconut paste and required amount of water for the gravy. add salt as needed and mix everything well. Stir occasionally over a low heat and do not boil the curry after adding the coconut paste.

4. Heat oil in another pan for tempering. Splutter mustard seeds and add chopped shallots, dried red chilly and curry leaves and saute it until the shallots get golden brown color.
Pour this seasoning into the curry and mix everything well. Remove from heat.

SERVE HOT WITH RICE AS SIDE DISH.
